देहरादून,पहाड़वासी। उत्तराखंड के टिहरी गढ़वाल के रहने वाले शेफ कुलदीप सात समंदर पार न्यूयार्क में वहां के लोगों को पहाड़ी अनाज से बने व्यंजनों का स्वाद चखा रहे हैं। कुलदीप न्यूयार्क में उत्तराखंड के मोटे अनाज और अन्य भोज्य पदार्थों को पहचान देने में अहम भूमिका निभा रहे हैं। इससे वह देश और उत्तराखंड प्रदेश का नाम रोशन कर रहे हैं। वह देश के प्रधानमंत्री नरेंद्र सिंह मोदी और उत्तराखंड के मुख्यमंत्री पुष्कर सिंह धामी द्वारा मोटे अनाज और पहाड़ी व्यंजनों को नए-नए तरीकों से बढ़ावा देने के भी मुरीद हैं।
कुलदीप ने बताया कि इससे देश विदेश में उत्तराखंड के परंपरागत अनाज को जहां बढ़ावा मिलेगा वहीं किसानों की आय बढ़ने से पलायन की समस्या से निजात मिलाने में भी मदद मिलेगी। कुलदीप न्यूयार्क के एक रेस्टोरेंट में बतौर सीनियर शेफ कार्यरत हैं। उन्होंने न्यूयार्क के जेम्स बियर्ड फाउंडेशन संस्थान में पहाड़ी खाना बनाकर अप्रवासी भारतीयों समेत अमेरिकन और वहां रह रहे अन्य देशों के लोगों को भी इसका स्वाद चखाया। कुलदीप के इस प्रयास को अप्रवासी भारतीयों के बीच भी खूब सराहना मिल रही है। वह मंडुआ की रोटी, बाजरा चपाती, भांग की चटनी का स्वाद अक्सर वहां पर लोगों को चखाते रहते हैं। कुलदीप ने कहा कि मेरा हमेशा पहाड़ी पहाड़ी व्यंजनों का आधुनिकीकरण करके देश और विदेशों तक इसकी पहचान बनाने का सपना रहा है।
इसका नतीजा यह होगा कि हमारे क्षेत्र के किसानों को इसका लाभ मिलेगा और विलुप्त होती हुई अपनी कृषि संपदा को हम बचाएंगे। इससे युवा पीढ़ी को रोजगार के अवसर मिल सकेंगे और पलायन रोकने में भी सार्थक होगा। कुलदीप भारत और खासकर उत्तराखंड की युवा पीढ़ी से अपील करते हैं कि अपने परंपरागत खाद्य उत्पादों को बढ़ावा दें। इनको उगाने में आगे आएं और इन्हें अपने भोजन की थाली में भी जरूर शामिल करें। यह रोजगार बढ़ाने के साथ ही सेहत के लिए भी बहुत फायदेमंद होते हैं।
