भरावन बनाने के लिए एक पैन गरम कीजिये, उसमें एक बड़ा चम्मच तेल डालकर गरम होने दें, तेल गरम होने के बाद इसमें हम 1 छोटी चम्मच घिसी हुई अदरक (अदरक का पेस्ट भी इस्तेमाल कर सकते हैं), 2 हरी मिर्च बारीक कटी हुई, 1 छोटा चम्मच जीरा पाउडर डालकर भून लेंगे| अब इसमें आधा कप मटर डालकर मसालों के साथ धीमी आंच पर भून लेंगे ताकि मसाले जले नहीं| अब इस मिश्रण में हम 5 उबले हुए आलू छोटे छोटे टुकड़ों में कर के डाल देंगे,और ऊपर से 1 छोटा चम्मच लाल मिर्च पाउडर,आधा छोटा चम्मच अमचूर पाउडर, स्वादानुसार नमक, 1-2 चम्मच बारीक कटा हुआ हरा धनिया डालकर अच्छे से मिलाते हुए भून लेंगे। बड़े आलू के टुकड़ों को छोटे टुकड़ों में तोड़ लेंगे मगर ध्यान रखें कि एकदम मैश न करें । मिश्रण को हम 7 -8 मिनट तक अच्छे से भून लेंगे ताकि सारा मॉइस्चर ख़त्म हो जाए और समोसे ज़्यादा देर तक के लिए क्रिस्प रहे। स्टफिंग तैयार होने के बाद इसे एक अलग बाउल में निकालकर रख लीजिए।
समोसे बनाने के लिए
आधे घंटे बाद सेट हुए आटे को निकालकर हाथ से हल्का हल्का मसल लेंगे और लोई बनाने के लिए इसे 2 भागों में बाँट लेंगे। थोडी सी बड़ी लोई बनाएंगे जिससे एक लोई में दो समोसे बन सके। लोई को हाथों से मल -मल कर एकदम गोल कर लेंगे। अब इसे ओवल आकार में, न ज़्यादा मोटी न ज़्यादा पतली, चपाती की मोटाई में बेल लेना है। ध्यान रखिये कि समोसे की शीट हमें बहुत ज़्यादा पतली नहीं करनी है। शीट को अब हम दो बराबर हिस्सों में काट लेंगे। एक शीट उठाकर उसके निचले हिस्से पर पानी लगाकर दोनों हिस्सों को मिला देंगे और तिकोन बनाकर समोसे का आकार दे देंगे। अब इसमें 2 चम्मच स्टफिंग डालकर भर लेंगे और प्लेट बनाते हुए दोनों किनारों को मिलाकर दबा देंगे जिससे ये अधिक मोटा भी न हो और अच्छे से चिपक जाए। ठीक इसी तरह हम बाकी के समोसों को भी बनाकर तैयार कर लेंगे। समोसों को एक बेकिंग ट्रे में रखकर पतली क्रीम से उन्हें ग्रीस कर लेंगे और 200 सेंटीग्रेट पर पहले से ही गरम ओवन में 25 मिनट के लिए बेक कर लेंगे।
